Shelled hazelnuts are kernel stock already removed from the hard shell for immediate cooking. Convenience is high; shelf life is shorter than sound in-shell lots if storage is warm. Taste target is clean sweet hazelnut without shell grit, mould flecks, or varnish aroma. Vacuum packs help, but cool storage after opening still matters. Ready for roasting, gianduja, baklava, cakes, and grinding. Check packs for shell shards before serving children. Freeze what you will not use soon—especially after you roast. Good shelled stock looks plump; poor stock is dark, shrivelled, or greasy-stale. Roast- and-rub is a common next step for pastry. Major tree-nut allergen labelling applies. Prefer recent harvest dates on bulk bins and sealed bags alike.
