Cuttlefish tube (mantle) is thicker and denser than squid tube—ideal for slow braises, stuffing, and thin-sliced raw preparations when very fresh. The flesh is white and firm. Braise until tender in ink or tomato, or slice thin for crudo. For quick cooks, slice very thin; thick pieces need time or pressure.
