Cumin seeds are small ridged oblong fruits of Cuminum cyminum, used whole or ground across Indian, Middle Eastern, North African, and Latin American cooking. Whole seeds pop and perfume oil in tadka; toasting brings nutty citrus-bitter notes. Dry-roast until fragrant, temper in fat, or grind to order. Do not confuse with black cumin or nigella. Whole seeds keep aroma longer than powder.
