Sausage Meat
Crocodile sausage meat is seasoned ground crocodile blended with fat for stuffing or bulk sausage—necessary because pure crocodile is extremely lean. Mild flavour accepts bold spice, herb, and chilli mixes; the finished link should taste juicy, not chalky. Keep cold while grinding and stuffing; taste a cooked sample for salt and spice. Grill or pan-fry finished sausages; bulk sausage browns for sauces. Pork fat or beef fat are common blending partners in commercial recipes.
