Crocodile ribs are bony sections with modest meat between them—more for sticky, slow-cooked finger food than for thick steakhouse slabs. Flavour is mild; glazes and spice rubs do the heavy lifting. Long moist heat loosens what meat there is from the frame. Braise or smoke low until meat tugs free; finish with glaze under heat. Serve as a sharing novelty plate. Yield is lower than mammal spare ribs, so portion expectations should be set accordingly.
