Crocodile jerky is thin-sliced lean meat dried with salt, spice, and low heat until chewy and shelf-stable. The mild base flavour accepts sweet-chilli, smoky, and citrus rubs without fighting them. Because the meat is so lean, slices must be even or thin edges turn leathery while thick centres stay soft. Dry until pliable but not brittle; store airtight. Popular as a tourist and specialty snack from Australian and African farms. Rehydration is uncommon—this product is meant for snacking.
