Stem

The clove stem is the nail-like calyx below the bud head—fibrous, intensely aromatic, and part of the whole dried clove sold as a spice. Ground stem and head together make standard ground clove; stem alone is sometimes cheaper industrial material. Use whole stems-with-heads for studding onions and hams. When grinding, a coffee mill or mortar works; sift if needed. Avoid large doses—clove numbs and can taste medicinal.
