Spice
Head
The clove head is the round flower-bud top of Syzygium aromaticum—the nail’s “cap” packed with aromatic oil. It looks like a small brown ball on the stem and holds much of the sweet-bitter eugenol punch. Grind whole buds (head and stem together) for even spice, or use intact in braises and mulled drinks and remove before serving. A little dominates desserts and rice dishes; measure carefully.
