Outer Curl

The outer curl of a cinnamon quill is the visible rolled exterior of the stick—protective layers that dry into the classic scroll shape. In cassia, this outer bark is thick and hard; in true cinnamon it is still thin but forms the familiar multi-layer cigar. Simmer whole outer quills in liquids for infusion, then remove. They are harder to grind than inner scrapings. Toast lightly before grinding if using a spice mill that can handle hard bark.
