The cashew shell is the hard, double-walled case around the kernel, and it is the reason cashew processing is industrial rather than kitchen-scale. Between its layers sits cashew- shell liquid—a caustic phenolic oil that burns skin and is sold into chemical markets, not food. Sound shells protect the meat during transport of raw cashew nuts (RCN) from farm to processor, but they are not a table product for casual cracking at home. Factories roast or steam, crack, and carefully separate kernel from shell so the edible meat never contacts the liquid. Do not attempt to roast field-raw cashews in an open pan as if they were peanuts. Clean empty shells after processing may go to biomass or industrial use; they are not a stock vegetable. When buying in-shell novelty packs, assume commercial pre-treatment has already managed the caustic risk—still follow the packer’s opening advice. Shell fragments left in kernel packs are a dental hazard; inspect carefully before serving. The shell’s real value is logistical: it defines how cashews move through global trade before anyone tastes the meat.
