Cold-pressed cashew oil is mechanically expressed from shelled kernels at controlled low temperatures so delicate aroma and fatty acids survive the press. It tastes softly of the nut—milky, sweet, barely toasted—unlike nearly silent refined oil. Best as a finishing oil for salads, grain bowls, and gentle pastry brushes rather than hard deep frying. Cloudiness can be normal in unrefined bottles; a varnish smell is never normal. Buy dark glass in small volumes, recap promptly, and finish within months of opening. Price reflects lower thermal abuse and often lower yield. Do not confuse this flavour oil with neutral refined frying fat, and never with industrial cashew-shell liquid. Good cold- pressed oil is pale gold and clean on the nose; rancid oil smells like paint thinner and should be discarded, not masked with herbs.
