Buffalo curry pieces are bone-in or boneless cubes cut for South Asian-style wet cooking—shoulder, leg, and neck mixed so marrow, collagen, and lean all share one pot. The dark, firm flesh of water buffalo stands up to long simmering with spices, coconut, or tomato without falling into mush as quickly as young lamb. Brown if the recipe calls for it, then cook in gravy until the meat yields to a spoon and the sauce coats the spoon thickly. Prefer pieces of even size so doneness is uniform. Salt early enough for seasoning to penetrate, and skim excess fat if the animal was heavily finished.
