Loin

Bluefin loin is the thick upper back muscle—the densest, most uniform section for steaks and searing. Expect deep red lean and melting fatty belly. This is the premium centre for high-heat cookery. Cut medallions or leave whole to roast. Conservation-sensitive; buy traced fish; raw service is the luxury use. Avoid cooking past the point where moisture leaves the grain; very high in belly (otoro), lean in akami.
