Bluefin belly is the richer ventral strip—oilier than the loin, with very high in belly (otoro), lean in akami. It browns well and stays moist under high heat. Grill, confit in oil, or slice for rich crudo if grade allows. Conservation-sensitive; buy traced fish; raw service is the luxury use. Yield is limited compared with loin.
