Black walnut butter is ground cured kernels taken past the paste stage until oils bind a dark, spoonable spread. Flavour is unapologetically resinous—excellent on toast with honey, swirled into ice cream bases, or loosened into sauces, but overwhelming if you expected mild English walnut butter. Natural jars separate; stir the oil back in. Warm gently only—scorching turns the wild note acrid. Freeze or refrigerate for quality; the fat oxidises in a warm cupboard. Good butter smells woodsy and clean; varnish aroma means discard, not more sugar. Label as a tree nut with walnut cross-reactivity.
