Bison liver is soft, dark, and intensely iron-forward—richer and more assertive than the mild muscle cuts of the same animal. Freshness is non-negotiable: a clean sweet-mineral smell is good; any sour or ammonia note means discard. Thin slices cook in minutes; thick slabs need careful heat so the exterior browns before the centre turns grainy. Flour and flash-sear with onions, blend into pâté with fat and spirits, or soak briefly in milk if a milder edge is wanted. Do not stew it long like chuck—the protein tightens and dries. Keep cold until the pan is hot, and serve at once while the texture is still silken.
