Ground bison is fresh mince from trim and secondary muscles—typically leaner than supermarket beef mince, with a sweeter, less greasy aroma when browned. Fat percentage is the whole game: too lean and burgers crumble and sauces taste dry; a modest beef-fat or bison-fat blend keeps texture plush without erasing the prairie character. Brown hard for ragù, chilli, and taco fillings so fond develops; keep the mix looser and cooler for meatballs and stuffings. Cook through to a safe temperature, but do not hold on high heat once done. Drain only if excess liquid pools; most pure bison grind needs its juices back in the pan.
