Burger
Bison burger is a hand-formed patty of ground bison—leaner than most beef blends, with a sweeter prairie flavour and less intramuscular fat to baste the meat as it cooks. Because there is little marbling to rescue an overcooked centre, the cook must keep the grind cool, form loosely, and avoid pressing juices out on the griddle. Simple salt and pepper let the clean red-meat taste show; heavy spice pastes can bury it. Grill or griddle over high heat just until the interior hits a safe temperature and still shows a blush if the fat percentage allows. Rest briefly so juices settle. Extra fat (or a beef-fat blend) helps commercial patties stay moist; pure lean bison needs a gentler finish and a softer bun or sauce on the plate.
