Pellicle
The pellicle is the paper-thin seed coat on a shelled beech kernel, richer in tannin and brown pigment than the pale interior. Left on, it adds a slight astringent edge and freckles to meals and cookies; rubbed off after blanching or light roasting, it leaves a cleaner, sweeter-looking meat for pale pastes. It is never the hard outer shell—confusing the two leads to the wrong tools and dental hazards. On seeds this small, pellicle work is slow, so most foragers leave skins unless colour truly matters. Dust from removed pellicles can tint white icings, so sieve carefully if you grind nearby. Home kitchens compost the skins. Good pellicles are dry and thin; mouldy or sticky coats condemn the kernel with them. Allergen status does not change when the pellicle stays or goes. Some diners find skin-on oily nuts harder to digest; blanching is the practical fix when that matters.
