Beech-nut skin is the thin brown pellicle clinging to the kernel after the hard shell is off. It carries mild tannin, colour flecks, and a light astringency that frames the soft sweet meat underneath. For rustic snacks and whole-food grinds many cooks leave it on; for pale pastes or delicate tasting plates they loosen it with brief hot water or a light roast and rub. The skin is not the woody shell—techniques and texture differ completely. Leaving skins on darkens meal and cookies with freckles and a slightly firmer bite; removing them gives cleaner colour at the cost of extra labour on seeds this small. Removed skins are usually composted at home. Whether skin-on or skin-off, the product remains a tree nut for allergy labelling. Good skins look dry and thin; black mould patches or sticky damp coats mean discard the kernel with them. Do not grind dirty skins into fine confectionery if a pale, refined look is the goal.
