Stem

The apple stem (pedicel) is the woody stalk attaching fruit to the spur—always removed before eating or cooking. Intact stems help prove fruit was not long fallen and bruised on the ground, so retail fruit often keeps them until prep. Twist or cut off and discard. No culinary use. Stem bowls and calyx ends are trimmed when presenting fine desserts.
