Anchovy heads are removed in most fillet packing but appear in whole-fish fry and stock uses. They add marine depth to fumet when clean and very fresh. Use in fish stock with care—small oily fish can turn stocks strong. For whole fried anchovies, heads may be left on as traditional in some coastal fries.
