Amberjack loin is the thick upper back muscle—the densest, most uniform section for steaks and searing. Expect firm, pale to pinkish, rich but clean when very fresh. This is the premium centre for high-heat cookery. Cut medallions or leave whole to roast. Closely related yellowtail (hamachi/buri) traditions apply to sushi-grade fish. Avoid cooking past the point where moisture leaves the grain; moderate oil, more than lean white fish, less than bluefin belly.
