Belly
Amberjack belly is the richer ventral strip—oilier than the loin, with moderate oil, more than lean white fish, less than bluefin belly. It browns well and stays moist under high heat. Grill, confit in oil, or slice for rich crudo if grade allows. Closely related yellowtail (hamachi/buri) traditions apply to sushi-grade fish. Yield is limited compared with loin.
