Albacore steak is a cross-cut or loin portion cut thick for grilling—bone-in or boneless—showing the characteristic pale tuna grain. It behaves like a meat steak more than a delicate white fish: high heat, short time, rest briefly. Season simply with salt, oil, and citrus or soy. Pull at rare to medium for juiciness. Frozen-at-sea steaks are common; thaw slowly in the fridge. Not the same product as beef steak—doneness cues are colour and flake, not only temperature habits from red meat.
