Albacore skin is silver-dark and tough when raw; cooked hard it can crisp if scored and dried. Many preparations remove skin for cans and sashimi slices; skin-on steaks benefit from a dry surface and hot pan so the skin does not stick and steam. Scale if needed, pat dry, and cook skin-side down first. Not a pork-style crackling—expect thin crisp fish skin. Discard if bitter or overly fishy after long storage.
