Albacore loin is the thick, upper back muscle—the prime cylindrical section used for steaks, searing, and premium cans. It is the densest, most uniform part of the fillet, with little belly fat compared with bluefin toro. Colour stays pale; flavour is clean and lightly meaty. Cut into medallions or leave whole for roasting. Do not cook past medium if you want moisture; albacore dries when pushed well-done without fat or sauce. Ideal for high-end jarred tuna in olive oil.
