Head frame is the bony skull after cheeks and collar meat are removed—still useful for stock if fresh, with collagen and residual flavour. Discard gills and eyes first. Expect a lighter, more gelatinous contribution than meaty body frames. Simmer with vegetable aromatics; do not boil hard. Strain carefully—head stocks can be cloudy. Combine with body frames for balanced broth.
