Albacore belly is the richer ventral strip along the fillet—fattier than the loin though still leaner than bluefin otoro. It browns and bastes itself on the grill and stays moist when seared hard. Flavour is slightly more pronounced than centre loin. Use for small grilled portions, confit-style confits in oil, or chop into rich tartare if grade allows. Trim bloody or dark patches. Volume is limited per fish compared with loin yield.
