Refined

Refined acorn oil has been bleached and deodorised to quiet colour and aroma, leaving a milder fat for bakers who want oak-origin oil without woodland perfume. It tolerates gentle cooking better than fragrant cold-pressed lots, yet it is still too rare and costly for everyday deep frying. Refining improves stability but does not make stale oil immortal— keep sealed and cool. Taste before dressing delicate dishes; some lots are nearly silent. Labels should say refined clearly so cooks do not expect virgin flavour. Pure fat carries none of the starch body of meal or flour.
