Whole acorn kernels are unbroken leached meats kept intact for visual dishes, controlled chopping, or slow drying before a coarse grind. Intact surfaces oxidise a little slower than cracked pieces and show quality more clearly—uniform colour and firm snap after dry. Unlike cocktail almonds, these are rarely a raw snack; most kitchens dry them further and mill or simmer them. A light oven toast after leaching deepens cereal aroma without the harsh edge of scorched starch. Pick out insect-damaged or grey pieces before they join a batch of meal. Cool fully before packing so residual heat does not steam the texture soft. Good wholes feel dense and dry; poor ones shrink, rattle hollow, or smell musty. Store cool and sealed; freeze if the climate is humid.
