Tofu skin (yuba) is the protein-fat film lifted from heated soy milk, sold fresh, dried, or as sticks. It wraps fillings, simmers in stocks, and fries to a meaty chew. Rehydrate dried sheets until pliable before use. Layer in hotpots, roll vegetarian “duck,” or braise in sweet-savoury sauces. Fresh yuba is delicate; dried keeps long airtight. Do not confuse with the outer skin of a tofu block—the product is a separate soy film.
