Block tofu is the standard pressed rectangular form sold by firmness—soft, medium, firm, extra-firm, and super-firm. Denser blocks brown and grill; softer ones scramble and braise. Press between towels when you want drier surfaces for searing. Cube, slice, or crumble into stir-fries, soups, and marinades. The mild flavour is a carrier for spice pastes and sauces. Store in water in the fridge if not vacuum-packed, changing the water daily, and cook before the sour smell of spoilage appears.
