Tiger-nut flour is a fine mill of dried chufa tubers—naturally sweet, gluten-free, and slightly oily. It browns quickly because of natural sugars; watch oven colour in cookies and pancakes. Sift before measuring; store cool and sealed. Good flour is dry and sweet- smelling; musty bags fail. Still a tuber product for allergy communication. Excellent in gluten-free baking and as a cousin to horchata culture rather than tree-nut flour.
