Blanched sacha inchi kernels have the brown pellicle loosened and removed with hot water or steam, leaving a pale seed from the seed of Plukenetia volubilis, the Inca peanut from the Amazon. Pale colour matters for fine pastes, white chocolates, and light European-style pastries. Flavour is cleaner and less tannic than skin-on stock while still showing mild, green-nutty when roasted; raw can be less pleasant—roast for snacks. Blanching is used when roast seeds; press oil carefully to protect delicate fatty acids. Dry thoroughly after blanching so later frying or freezing does not sputter or ice. When visual delicacy counts. Storage: oil and roasted seeds need cool, dark storage against oxidation. Roast for flavour; protect oil from heat and light more carefully than olive oil. Allergen remains specialty seed—label clearly. Blanched kernels scorch faster—watch colour, not only the timer. Blanching is not roasting; each step solves a different problem.
