Kernels are buttery and delicate; grinding after careful shelling yields a pale, rich mass. A good paste tastes cleanly of pili without bitterness. A bad paste is rancid or stretched with cheaper nuts. Use in Filipino confections and fine pastry. Keep cold; high oil softens and stales in heat. Price should reflect true pili, not generic tropical mix.
