Pattypan flesh is the moist, pale interior under the thin skin—mild, tender, and quick-cooking. In small fruit the seed mass is soft enough to eat; in large fruit scoop out developed seeds before stuffing or pureeing. The flesh takes butter, garlic, herbs, and cheese well without strong sweetness. Dice for ratatouille-style mixes, grate into fritters, or roast wedges until edges brown. Salt lightly and cook hot to limit water release. Pair with tomato, basil, lemon, and soft herbs.
