Filo (phyllo) is paper-thin wheat dough sheets brushed with butter or oil and stacked for shatteringly crisp baklava, börek, spanakopita, and strudel-style wraps. Sheets dry out within minutes on the bench; keep unused stacks under a damp cloth. Commercial frozen filo makes the style practical at home. Layer generously, seal edges, and bake hot until deep golden. Sugar syrups soak baklava after baking; savoury pies need a dry filling so the bottom stays crisp. Rewrap leftover sheets airtight and refreeze or refrigerate promptly.
