Paradise-nut paste is a thick grind of cream or paradise nutmeats for confectionery experiments, closer to a rare praline base than to peanut butter volume. Shelling labour keeps it scarce. A good paste smells sweet-rich and clean. A bad paste is varnish-like. Loosen carefully for ganache-style work. Freeze portions. Do not confuse with supermarket Brazil-nut butter without checking species.
