It adds visible flecks and a rustic crunch to cookies, coatings, crumbles, and hearty batters. Flavour is rich and creamy, often compared with Brazil nuts but from related canopy trees. Meal often keeps more skin and oil than refined flour, so it tastes fuller and darkens more in the oven. Toast meal in a dry pan to bloom aroma before folding into doughs. Useful wherever regional Amazonian snacking and small-lot specialty export. Storage: cool storage against rancidity. Process notes: forest harvest and careful shelling similar in spirit to Brazil-nut chains. Do not assume identical nutrition or selenium to Bertholletia Brazil nuts.
