Whole Kernel

Whole paradise nut kernels are complete seed meats from Lecythis seeds related to Brazil nuts, sometimes called cream nuts or paradise nuts, not sliced or chipped, sold for snacking, topping, and controlled chopping. Intact surfaces oxidise a little slower than fine pieces and look premium on pastries and salads. Flavour should be rich and creamy, often compared with Brazil nuts but from related canopy trees. Toast evenly in a low oven, shaking often, then cool fully before packing or the residual heat will soften the crunch. Use them in cooking such as regional Amazonian snacking and small-lot specialty export. Species handling: forest harvest and careful shelling similar in spirit to Brazil-nut chains. Storage: cool storage against rancidity. Do not assume identical nutrition or selenium to Bertholletia Brazil nuts. Allergen: tree nut; selenium stories differ by species and soil—do not assume Brazil-nut doses. In comparison, cousin to Brazil nut in ecology and richness, scarcer in global retail. Pick out damaged kernels before service; one rancid piece is memorable for the wrong reason.
