Groat

Oat groats are the whole oat kernels with only the inedible hull removed—the least processed common oat form. They cook into a chewy, nutty porridge and take longer than rolled oats. Steel-cut oats are groats chopped into pieces; rolled oats are steamed and flattened groats. Simmer with plenty of liquid until tender, or soak overnight to shorten cooking. Excellent for hearty breakfasts and grain bowls. Store cool and airtight; whole oats’ oils can go rancid.
