Nutmeg seed is the hard, oval kernel of Myristica fragrans—the familiar whole nutmeg grated over custards, béchamel, spinach, and baking. Freshly grated seed is warm, sweet-spicy, and far more aromatic than pre-ground powder. A little goes far; excess turns medicinal and bitter. Grate with a fine microplane as needed. Store whole seeds airtight for months. Classic with dairy, potato, and holiday baking; also used in spice blends and sausages.
