Mace

Mace is the lacy red aril that wraps the nutmeg seed, dried to orange-yellow blades or ground to powder. Flavour is related to nutmeg but brighter, more peppery, and slightly finer—excellent in light sauces, pickles, cakes, and delicate custards where nutmeg might dominate. Use blades in infusions and remove before serving; use ground sparingly. Store airtight; mace fades faster than whole nutmeg seed.
