Nori sheets are thin, paper-like dried panels of pressed Porphyra (and related) seaweed—the sushi wrapper and rice-ball covering of Japanese cookery. Good sheets are deep green-black, slightly glossy, and crisp; they soften and taste of ocean and toast when briefly flamed. Size is standardised for rolling makizushi. Toast lightly over a flame or in a dry pan before use if the pack is not pre-toasted. Keep airtight—humidity turns sheets limp and chewy. Tear for soups or use whole for rolls and hand rolls.
