Nori powder is finely milled dried seaweed for dusting, blending into salts, and colouring doughs or batters. Flavour is concentrated marine umami; a little goes far. Finer than flakes, it disperses evenly in dry rubs and compound butters. Sift if clumped and keep away from humidity. Mix with salt and sesame for a quick seasoning. Avoid scorching in dry pans—bitterness follows.
