Rice noodles are strands or sheets from rice flour—and sometimes tapioca—ranging from hair-thin vermicelli to wide pad thai ribbons and fresh sheet noodles for rolls. They are naturally gluten-free, pale, and mildly sweet. Dried noodles need soaking or brief boiling; fresh sheets are ready to roll or snip. Rinse after soaking if sticky; toss with oil for stir-fries. Over-soaking turns them mushy. Core to Southeast and southern Chinese noodle soups and wok dishes.
