Navy bean paste is cooked beans mashed or puréed to a thick, spreadable consistency for dips, soups, binding veggie patties, and smooth baked-bean bases. Skins can be left for rustic texture or passed through a sieve for silk. Fat and seasoning carry flavour—beans alone are mild and starchy. Make paste from hot beans for easiest mashing; thin with cooking liquid, stock, or olive oil. Refrigerate and use within a few days, or freeze in portions. Unlike sweet red-bean paste, navy paste is savoury by default unless sugar is added for a specific recipe.
