Millet grain is the small whole seed of proso, pearl, finger, or related millets—gluten-free, mild, and slightly sweet when cooked fluffy like couscous or soft like porridge. Toast dry first for nuttier flavour. Pearl millet and proso are common pantry types; sizes and colours vary. Rinse, then simmer with about two parts liquid until tender. Use as a side grain, in pilafs, or cooled in salads. Fresh grain smells clean; old millet can turn bitter.
