Millet flour is finely milled millet seed for flatbreads, porridges, and gluten-free baking blends. Flavour is mild-cereal and slightly sweet; colour is pale cream to yellow depending on type. It does not form gluten, so pair with binders or other flours for risen breads. Use in roti-style breads, coatings, and cookies. Store cool; millet flour can turn bitter if old. Sift if lumpy after storage.
